What does UAE hotel HR read in a chef's experience letter?
UAE hotel HR teams read chef experience letters for cuisine specialisation, station, hotel category and brand fit. A Continental Sauté chef who has spent four years at the Taj Mumbai's Wasabi reads differently to a generalist who has spent the same time at a three-star property in Pune. A senior baker who has run a hotel breads station at the ITC Maurya reads differently to one whose experience is in retail bakery.
Ask each past Indian hotel or restaurant for a detailed experience letter before you leave. Name the cuisine (Indian regional, Pan-Asian, Italian, French, Mediterranean, Japanese, Pastry, Bakery), the station (Sauté, Grill, Garde Manger, Pastry, Bakery, Cold Kitchen, Tandoor, Indian Curry, Continental), the hotel category and brand, the meal periods and the supervisor.
Which documents need attestation for a UAE chef visa from India?
The UAE is not a Hague apostille country for Indian personal and educational documents. You can confirm that on the HCCH status table. So this is not apostille in India. The work runs through embassy attestation and UAE MOFA attestation, both done inside India, and the MEA attestation step sits in the middle of it.
The attestation steps on a UAE chef or hotel staff file
- State-level attestation on your qualification. This is the educational certificate attestation step on the hotel management diploma or culinary degree (B.Sc Hospitality, IHM diploma, ITI catering, Le Cordon Bleu certification, ICCA Culinary Academy certification). Educational documents go through State HRD attestation; personal documents go through SDM, depending on the issuing state. Three to seven working days, longer where the state directorate is slow.
- MEA attestation in Delhi. Three to five working days.
- UAE Embassy attestation in Delhi through VFS Global. Four to seven working days standard. The UAE Embassy desk is run through VFS Global, not a private agent.
- UAE MOFA attestation, the digital stamp. Since the 2023 MOFA digital rollout, this is applied in India through the same VFS Global desk. You do not wait until Dubai for it.
- Certified Arabic translation by a UAE-listed translator where the UAE hotel HR asks for it. This is the certified translation step, a sworn Arabic translation of the qualification and the experience letters.
For the Police Clearance Certificate, the RPO issues it first, then the full embassy attestation and UAE MOFA attestation work follows on the same document.
Tracked return courier takes three to seven working days inside India. If everything is in order, the whole sequence runs in three to five weeks.

Do UAE chefs need ECR emigration clearance, and where does the recruiter fit?
The UAE is on the ECR list. POE clearance through the e-Migrate portal is mandatory for ECR passport holders being recruited through an MEA-registered Recruitment Agency. You can see the live UAE visa rules on the ICP federal portal.

The hotel management diploma (IHM, Welcomgroup, Oberoi Centre of Learning and Development, Manipal University, Christ University Hospitality), the culinary qualification (ITI catering, Le Cordon Bleu, ICCA, Culinary Academy of India), or the relevant academic qualification.
HACCP, food safety, allergen awareness, fire safety and first aid certifications where applicable.
Detailed experience letters from each past Indian hotel, restaurant or banquet venue, naming the cuisine, the station, the hotel category, the meal periods and the supervisor.
The Police Clearance Certificate from the RPO.
The passport with at least eight to twelve months of validity.
The UAE employer offer letter, the demand letter and the power of attorney from the UAE employer to the Indian RA.
